If you have two or more targeting you, then you should have an ally or two around. That means that two people are focusing on you, which allows your teamates to focus on someone else. One way to handle it is to place constant pressure on them for as long as possible. That means blocking/dodging, staying close and scaring them so they stick to you. That allows your team the chance to keep fighting the others without fear of arrow fire.
One of the better ways to hit archers when they are dting you is to do quick and unexpected jump attacks. Make sure they aren't obvious, and make sure to hit your target.
If it's just one archer, then quick blocks and random pattern movement are your best bet. Without the presence of bugging they are a rather easy target overall. Fighting an archer relies on quickness. Quick attacks, quick steps, quick blocks, etc. As you improve, you can often land special attacks against an attacking archer as well. That is an incredibly useful tool, especially if you are specialized in special attacks.
